Dumplings: more than food, it's togetherness

Ask any Chinese person what food means "home", and the answer will almost certainly be jiaozi - dumplings. These little parcels of dough and filling are the soul of Chinese family cooking, served at New Year, on birthdays, and at every reunion worth celebrating. The word jiaozi sounds like "the moment of change" in Chinese, which is why they are eaten at midnight on Lunar New Year's Eve: a delicious way to welcome the new.

What you'll do in a PandaStudyTour dumpling class

Our dumpling workshops put you at the table, not the stove. A chef or a local home cook will guide you through the whole process: mixing flour and water into a soft dough, rolling each wrapper into a perfect thin circle, then filling and pleating them closed - the pleats are the hardest and most satisfying part. You'll learn at least three folding styles: the classic crescent, the round "purse", and the tricky "money bag". Then comes the fun part - steaming or boiling your own dumplings and eating them with black vinegar, chilli oil and garlic. Vegetarian, pork, beef and shrimp fillings are all available, and we always prepare a few surprises like the "lucky dumpling" with a hidden coin or peanut.

Where and how long

Dumpling classes can be arranged in nearly every city we serve - Beijing, Xi'an, Shanghai, Chengdu, Guilin and many more - and fit neatly into a half-day itinerary. Morning classes finish with a dumpling lunch; evening classes are a warm, social way to end a day of sightseeing. Classes run 2–2.5 hours including eating time, and families, couples and solo travellers are all welcome.
