Where Chinese food really begins
No restaurant in the world can show you China the way its markets can. Before dawn, in cities from Kunming to Harbin, wet markets come alive: pyramids of unknown greens, tanks of live fish, baskets of quivering tofu, stalls stacked with dried mushrooms, star anise, Sichuan peppercorns and things you can't name. For a curious traveller, this is the greatest free show in China - and the best preparation for understanding the food you'll eat and cook during your trip.
What the tour includes
Our market tour is led by a local food guide who turns chaos into understanding. Together you'll walk the aisles with a purpose: we visit the vegetable sellers to identify Chinese greens (and learn which ones go in which stir-fry), stop at the noodle stall to watch fresh noodles cut by hand, taste pickles and tofu products, and hunt for the specific ingredients you'll use in your cooking class later. Along the way you'll learn the etiquette of Chinese market shopping - how to ask for "half a jin", how to pick a good cucumber, and why bargaining has its own music. We finish where it all makes sense: sitting down to a bowl of freshly made noodles or dumplings from the market's own food stalls, cooked by people who've been doing it for decades.
Practical details
Market tours run in the morning (markets are liveliest before 9am) and last 1.5–2 hours. They're available in most major cities and combine perfectly with a dumpling or noodle cooking class - shop for the ingredients, then cook them yourself.
